Coconut Almond Breakfast Muffin

A quick and easy breakfast bun for those of you who miss having bread. For me, this is a great alternative and doesn't taste too "eggy"
Ingredients
  • 1 large Egg
  • 1.2T Butter
  • ½T Sour Cream
  • 0.5t Baking Powder
  • 0.5T Coconut Flour
  • 1.5T Almond Flour
Instructions
  1. Melt the butter in the microwave until just melted.
  2. Stir in the sour cream until well combined.
  3. Whisk in the egg.
  4. In another bowl, mix together the baking powder, coconut flour and almond flour.
  5. Add the wet ingredients to dry ingredients and mix until combined.
  6. Transfer to a small, microwave safe dish.
  7. Microwave on high for 1 minute 30 seconds.
  8. *Check how it's cooking after 1m 15s - depending on the strength of your microwave.
Notes
For a bit of a treat I sometimes break up 20g of cheese and 1 slice of bacon (that I've cooked in the microwave and broken into pieces) before cooking. The taste of these with the cheese and bacon cooked through it is divine!
